Asian Slaw Salad

Vibrant, zingy, sweet, fresh and crunchy - this one is an absolute taste sensation! Plus it’s around 400 calories, high in protein and contains 4 portions of veg!

Ingredients

  • 100g raw beetroot - grated

  • 100g raw carrot - grated

  • 1 stick of celery - finely diced

  • 1 red pepper - finely diced

  • 50g edamame beans

  • 100g prawns (leave out for vegan option or replace with some crumbled tofu or more edamame beans)

  • 5g sesame seeds

  • 10g peanuts

  • 1 tablespoon honey (use maple or agave syrup for vegan option)

  • 1/2 tablespoon tamari

  • 1/2 teaspoon fresh grated ginger

  • 1/4 teaspoon chilli powder or to taste

  • Juice of half a lime

  • Bunch of fresh coriander

Method

This couldn’t be simpler, although involves a bit of chopping time. So put on some tunes and enjoy!

  1. I use frozen edamame beans so pop these on to boil for 5 minutes while you prep the veg!

  2. Then add the beetroot, carrot, pepper, celery, prawns, edamame, honey, tamari, ginger, chilli powder and lime juice to a big bowl and mix together.

  3. Top with the sesame seeds, peanuts and coriander.

  4. Tuck in to your enormous bowl of delicious goodness!

Top tip: when I get ginger I peel it and put it in a little pot in the freezer. It’s really easy to grate like this and also means you can keep it for longer without it going mouldy in the fridge.

You can sub in all sorts of veg and salad to this so experiment with what you have in the fridge.
