Cocoa and Coconut Bites
Utterly delicious and quick to make! These fabulous sweet treats are packed with nutrients from fruit, nuts, whole grains and omega 3 seeds. Enjoy!
Ingredients
190g dates without stones
90g mixed nuts - whatever you have! Ground almonds also work well!
50g oats (gluten free if required)
10g chia seeds
30g ground flaxseed
15g cocoa powder
15g desiccated coconut
Method
Add your oats and nuts to a Nutri Bullet or food processor and blitz to a fine powder.
Add these to a bowl and then blitz the dates into a smooth paste. If they are a bit dry you can add a tablespoon of warm water to get them going.
Add the date paste, cocoa powder, flaxseeds and chia seeds to the bowl and combine all the ingredients together into a big ball.
Roll into small balls - I make 20 from this mix and weigh them to get the same size but you can freestyle it ;-)
Roll the balls in the coconut and enjoy! Keep the rest in the fridge.
