Cocoa and Coconut Bites

Utterly delicious and quick to make! These fabulous sweet treats are packed with nutrients from fruit, nuts, whole grains and omega 3 seeds. Enjoy!

Ingredients

  • 190g dates without stones

  • 90g mixed nuts - whatever you have! Ground almonds also work well!

  • 50g oats (gluten free if required)

  • 10g chia seeds

  • 30g ground flaxseed

  • 15g cocoa powder

  • 15g desiccated coconut

Method

  1. Add your oats and nuts to a Nutri Bullet or food processor and blitz to a fine powder.

  2. Add these to a bowl and then blitz the dates into a smooth paste. If they are a bit dry you can add a tablespoon of warm water to get them going.

  3. Add the date paste, cocoa powder, flaxseeds and chia seeds to the bowl and combine all the ingredients together into a big ball.

  4. Roll into small balls - I make 20 from this mix and weigh them to get the same size but you can freestyle it ;-)

  5. Roll the balls in the coconut and enjoy! Keep the rest in the fridge.
