Chia Jam
Method
Add the frozen fruit to a pan and cook over a medium heat with a lid on, stirring occasionally.
When the berries are defrosted and cooked through for a few minutes mash the mixture to help break down the fruit.
Simmer to reduce the mixture down - the more you do this the thicker the jam will be.
Add the chia seeds and stir thoroughly.
Transfer to a jar to cool and put in the fridge for a few hours or overnight. The mix will be quite loose when you put it in but the chia seeds will thicken the jam as it rests in the fridge.
Spread on wholegrain toast, pancakes or eat like a compote with yogurt and granola.
