Chia Jam

This fruity and fabulous chia jam is made from only frozen fruit and omega 3 seeds. It has -75% less sugar than normal jam, less than half the calories, plus more fibre and protein to boot! Pure, simple, delicious and nutritious!

Ingredients

  • 200g frozen blueberries

  • 150g frozen cherries

  • 1 tablespoon chia seeds

Makes a pot of jam around 250g.

You can use different varieties of fruit - berries work well so you could try blackberries, raspberries or strawberries.

Frozen fruit is great as it releases water and juice to help get that jammy consistency.

Method

  1. Add the frozen fruit to a pan and cook over a medium heat with a lid on, stirring occasionally.

  2. When the berries are defrosted and cooked through for a few minutes mash the mixture to help break down the fruit.

  3. Simmer to reduce the mixture down - the more you do this the thicker the jam will be.

  4. Add the chia seeds and stir thoroughly.

  5. Transfer to a jar to cool and put in the fridge for a few hours or overnight. The mix will be quite loose when you put it in but the chia seeds will thicken the jam as it rests in the fridge.

  6. Spread on wholegrain toast, pancakes or eat like a compote with yogurt and granola.
