Banana & Peanut Butter ‘Ice Cream’
Method
Chop ripe bananas into slices and put them in the freezer. This is a great way to reduce food waste when bananas go past their best. I always have a stock in the freezer but if you are starting from scratch I would leave them to freeze overnight.
Add your frozen banana, peanut butter and a splash of almond milk to a Nutri Bullet or blender and blitz. It will take a few goes to get the right consistency - blitz, scrap down the mixture and add a bit more milk until you get a smooth, silky ‘Mr Whippy’ type consistency with no lumps and it’s ready to serve. It’s best to put as little milk in as possible to get the thickest consistency possible so go slow or you might get more of a milk shake ;-)
It is delicious just like this or you can make an indulgent sundae with toppings like chopped dark chocolate, chopped almonds and chocolate peanut butter like I’ve done here. Or try fresh strawberries! You can also put chocolate peanut butter in the base recipe which is really tasty!
So simple, clean and delicious - it’s an absolute winner!
