Berry ‘Ice Cream’

You won’t believe how good this is when all it contains is fruit and yogurt! Refreshing, nutritious and utterly delicious!

Ingredients

To make 1 portion you’ll need …..

  • 160g frozen berries or fruit - I used 80g blueberries and 80g cherries for this one

  • 100g plain soya yogurt (or your usual plain yogurt)

That’s it! ;-)

Method

  1. Put all the ingredients in a blender or nutri bullet and blitz into a smooth, ‘Mr Whippy’ consistency. You will need to scrap the mix down at least once and blitz again to get out all the lumps of frozen fruit.

  2. Enjoy! It couldn’t be simpler!

This is great on a hot day, as a delicious dessert or a base for smoothie bowls! It’s high in fibre, a source of protein, under 150 calories and contains 2 portions of fruit so it’s nutritious as well as delicious!

I give this to my daughter for pudding and she feels like it’s a treat but she’s just eating yogurt and fruit - everyone’s a winner!
